Why Gaziantep Pistachios for Baklava

Gaziantep is not only the homeland of the Antep pistachio but also the city most closely associated with baklava. For generations, baklava masters here have relied on the vivid colour, rich aroma and fine texture of early-harvest Antep pistachios. Baklava is judged first by the eye and then by the palate, so the right pistachio is the most visible signature of your product. As a pistachio supplier for baklava producers, Niyaz Food draws on four generations of family experience in the Antep pistachio trade to supply kernels that meet the expectations of professional baklava and pastry kitchens.

Grades and Forms for Baklava and Pastry

  • Green pistachio kernels (boz iç): harvested early, with a deep green colour. The classic choice for premium baklava, şöbiyet, kadayıf and visible pistachio layers.
  • Ground pistachios (pistachio powder): finely ground green pistachios for sprinkling on top of baklava and for decorating pastry, where colour makes the first impression.
  • Meverdi kernels: picked in mid-August, light green to yellowish – a cost-effective option for inner fillings and products where the pistachio is less visible.
  • Peeled green kernels: skinless green kernels with an especially bright colour, used for premium decoration and high-end patisserie.

Many producers combine grades – for example meverdi in the filling and green kernels or ground pistachios on top. We are happy to work out the right combination for your products and price targets.

Selection, Quality and Consistent Supply

Baklava customers notice immediately when colour or taste changes. That is why we select products carefully together with our producers, have them sorted and processed under controlled conditions, and work in line with ISO 9001:2015 and ISO 22000:2018. We share the harvest and grade of each product before you order, and we plan larger volumes with you in advance so that your supply stays steady through busy periods such as Ramadan and the holidays.

Packaging and Export

We supply in 10 kg cartons, 20 kg vacuum cartons and 25 kg OPP sacks. Vacuum cartons help preserve the colour and freshness of green kernels and ground pistachios. For baklava producers and importers abroad, we prepare export-ready shipments as a pistachio exporter in Turkey, with the documentation your market requires available on request.

Frequently Asked Questions

Which pistachio is used for baklava?

Premium baklava traditionally uses early-harvest green pistachio kernels (boz iç) for their vivid colour and aroma. Ground pistachios are used for topping, while meverdi kernels are a cost-effective option for inner fillings. Peeled green kernels are preferred for high-end decoration. We can help you choose the right combination for your products.

Should I choose ground or whole pistachios for baklava?

It depends on the step. Whole green kernels are usually chopped in your own kitchen and layered inside the baklava, while ground pistachio powder is sprinkled on top for colour. Some producers prefer to grind kernels themselves for maximum freshness. Tell us about your process and we will recommend the forms that fit.

How should pistachios for baklava be stored?

Keep pistachios in a cool, dry and dark place, away from strong odours, and close packs tightly after opening. Vacuum cartons help green kernels and ground pistachios keep their colour and freshness. For larger volumes, planning deliveries around your production schedule makes it easier to always work with fresh stock.
