The main difference between green (boz), meverdi and red pistachio kernels is the stage of ripeness at which the Antep pistachio is harvested. Green kernels are picked early, before the nut is fully mature, and are prized for their vivid colour in baklava and patisserie. Meverdi kernels are harvested in the transition period, so their colour shifts from green towards yellowish green. Red kernels are harvested at full maturity; their skin carries reddish-purple tones and their flavour is the most intense. The right choice depends on whether colour, filling volume or roasted flavour matters most in your product.
One tree, three harvests
Green, meverdi and red kernels are not separate varieties. They come from the same Antep pistachio trees, harvested at different times. As the fruit ripens, the colour, size, oil content and aroma of the kernel change. By choosing when to harvest, the grower decides which type of kernel the crop will become. A lot picked early from an orchard becomes green kernels, while a later pick from the same orchard becomes red kernels.
What sets each type apart
Green pistachio kernels (boz iç)
Green kernels are among the most sought-after forms of the Antep pistachio. Because they are harvested early, the kernels are small and rich in chlorophyll, giving them a deep, bright green colour. The shell has not yet split, so the kernel is removed by cracking the shell and then sorted by hand and machine.
- Colour: Deep, vivid green
- Size: Small and firm
- Flavour: Delicate, fresh and aromatic
- Uses: Baklava, kadayif, gelato, Turkish delight, chocolate and cake decoration
When pastry chefs ask for “green pistachios”, they usually mean this grade. Its ability to keep its colour after cutting or grinding has a direct impact on how the finished dessert looks. See our green pistachio kernels page for packaging options.
Meverdi pistachio kernels
Meverdi pistachios are harvested after the green pick and before full ripeness. The kernels are slightly larger than green kernels, with a mixed colour ranging from green to light yellow-green. As oil and aroma begin to develop, the taste is more pronounced. Meverdi is a cost-effective option where colour is not the top priority but genuine pistachio flavour is: baklava fillings, cake and pastry fillings, wafers and pistachio paste. Red pistachio kernels
Red kernels are harvested when the pistachio is fully ripe and its outer hull has turned reddish. The kernels are at their largest, the skin shows red-purple tones and the flesh is yellowish green. Oil content and aroma peak at this stage, which is why red kernels are favoured for roasted kernels, snacks, chocolate, halva, confectionery and bakery products.
Side-by-side comparison
| Feature | Green | Meverdi | Red |
|---|---|---|---|
| Harvest | Early | Mid-season | Full maturity |
| Colour | Deep green | Green to yellowish green | Yellowish green, red-purple skin |
| Kernel size | Small | Medium | Large |
| Flavour | Delicate, fresh | Medium | Rich, intense |
| Typical use | Baklava, gelato, decoration | Fillings, paste, wafers | Snacks, chocolate, halva |
In short: choose green kernels for visual impact, meverdi for a balance of cost and filling, and red kernels for intense flavour and roasting. Many manufacturers combine them, for example meverdi inside the baklava and green pistachio powder on top.
A few questions make the choice easier: Will the pistachio be visible in the finished product, or hidden in a dough or cream? Will it be roasted? Does your customer expect a premium look or an accessible price? For a display dessert or a pistachio gelato, green kernels are hard to replace, while for paste or wafer fillings meverdi or red kernels often make more economic sense. Whatever you choose, testing a sample in your own recipe before ordering is always the safest approach.
